How do I read form data from Exchange emails?

Hello

I'm developing a service that will read emails from a certain folder
and process them using VB.NET 2003 and Exchange server 2003.

The emails to be processed are structured using custom forms.

I have found various technologies that can read emails directly from
exchange, but have found no info and no way to read the form fields
directly.

Can anyone help with this?

I could do with a link, or some code, or, at least, a pointer to the
correct technology to use and an idea on what to manipulate to read
the form fields.
